My Bright Eyed Susan

My Bright Eyed Susan....

8 oz self raising flour
8 oz butter or margarine
4 oz castor sugar
2 tbsp water
1 tsp Vanilla essence
1 egg yolk
1500g chopped cashew nuts
Red cherries

  1. Heat oven to 180 C.
  2. Sift flour.
  3. Cream butter and sugar till light and fluffy.
  4. Add in egg yolk, water & vanilla
  5. Add flour, bit by bit and mix well
  6. Form dough into balls and roll in the slightly beaten egg white, then roll into nuts.
  7. Decorate with cherries, half or quarter cherries.
  8. Bake in the oven for 15-20 minutes.
  1. This is another award winning recipe among my family and office mate, kurang manis and that’s why the cherries tu potong besar2 sikit to own to the name lah Bright-Eyed!!
  2. This receipe dapat dari my friend Kak Yat yang selalu bawa biskut ni lepas raya.Tapi ration 1 atau 2 keping jer sorang utk kami housemate dia.Sedap!! Kakak dia yang buat biskut ni and she passed away a few years back due to breast cancer.Al Fatihah.
  3. This is one of raya cookies yang I akan buat. Then I lost the receipe, then the making of this cookies stop. Cari punya cari rupa-rupanya my other friend Kak Chik simpan this recipe , Alhamdulillah, will start to do the cookie again.
