My Rojak Petis Sauce

Rojak Buah with Homemade Rojak Sauce!!!
Never came across my mind to look for Rojak Petis recipe and try to make it. Selalunya beli jer, yg famous is Mak Bee brand. However, as my boss asked to have something DIY dish, as per previous migration weekend (weekend work),  where we had successfully DIY fruit tartlettes.... 

Pikir punya pikir, apalah recipe that can be make at office pantry without having to cook. Taaraa... Rojak Buah and Sengkuang Calit. So as agreed, Cik Ngah bawak kuah rojak, dan yang lain2 bawak pelam, timun, jambu dll... Semua mesti siap bersih dan potong... 

Alhamdulillah, all went well and Thumbs Up for the kuah rojak!!! Here is the recipe (caution : this recipe produce a lot!!);

Bahan-bahan :
1 botol kecil kicap lemak masin
500g gula melaka
100gm gula pasir
1 buku kecil belacan [bakar, dihancurkan]
1 botol sos cili
1 tin petis udang
1 tin blended cili kering (guna tin petis sebagai sukatan)

5-10 biji blended cili padi
250gm tepung ubi [dibancuh dgn air secukupnya]


Condiments;
Bijan Goreng
Kacang tanah goreng dan ditumbuk kasar (Cik Ngah beli kacang tanah 'Tong Garden' dan tumbuk)

Cara-cara :
  1. Blend cili kering + cili padi + belacan bakar
  2. Masukkan semua bahan dalam peiruk kecuali bancuhan tpg ubi.
  3. Masak atas api hingga licin, jika ada rasa kurang tambahlah apa yg perlu
  4. Masukkan sdkt demi sdkt paste tpg ubi, kacau tanpa henti supaya tak bergentel
  5. Masak hingga kuah sdkt pekat & licin
  6. Simpan dlm bekas bertutup
Cara Hidang;
  1. Basuh dan potong buah-buahan dan masukkan dlm mangkuk
  2. Masukkan kuah rojak, bijan dan kacang.
  3. Gaul rata dan sedia utk dimakan..

My Vintage Peanut Butter Cookies

Vintage Peanut Butter Cookies... Biskut Senyum??
Every Aidil Fitri, I would specifically looked for these cookies when visiting Pak Long and Mak Long. I love these cookies and I could only find these cookies at Pak Long and Mak Long's house and they were handmade by Mak Long. Asyik lupa nak mintak resepi and I kept in mind that I am gonna try to make these delicious cookies. 

I couldn't remember when, but I saw the non stick tray that can be used to make these cookies at AEON, apa lagi terus beli and balik cari resepi lah apa lagi.. cari punya cari jumpa and ambik gambar jer.. senang nak refer bila nak buat. Finally I did it last weekend. Alhamdulillah menjadi first attempt.. To me I'll add more peanut butter and a little bit more sugar next time.

Here is the recipe that Cik Ngah used, modified version;

The baking tray.... 
Bahan-bahannya;

1 biji kuning telur
100g mentega
50g lemak sayuran atau shortening
120g gula perang halus
200g creamy peanut butter
225g cookies flour *
150g tepung jagong*
1 s/k baking powder* 
1 s/k vanilla
50g kismis hitam
* ayak bersama

Cara-caranya;
  1. Pukul mentega, lemak sayuran dan gula hingga kembang.
  2. Masuk kunig telur dan kacau hingga rata.
  3. Masukan esen vanila dan peanut butter dan kacau sebati.
  4. Masukan tepung yg dah diayak,gaul sebati dan uli jadi sebuku.
  5. Bahagi adunan dan buat bulat2 sebesar guli,
  6. Sediakan acuan berbentuk cermai.
  7. Letak kismis tengah2 dlm acuan
  8. Masukan adunan dlmnya dan tekan2 bagi rata
  9. Bakar dalam oven dengan suhu 160c selama 10 - 15 minit. (I used fan mode of my oven)
