My Ikan Bawal Emas Kukus


Bahan-bahannya;

Perap ikan dengan garam,
lada sulah dan jus limau nipis
1 ekor ikan bawal emas (boleh guna ikan lain)
1 biji tomato - yg kecil dibelah lapan
2 inci halia muda *
1 biji cili merah *
* dimayang halus mcm batang mancis

3 biji cili padi (optional) **
1/2 labu bawang putih jeruk **
2-3 keping Jeruk Kulit limau **
1 batang serai **
1 labu bawang besar - yg kecil jer**

Bahan-bahanya....
2 biji jagung muda **
1 kuntum cauli flower **
Daun bawang dan daun sup **

** dihiris halus

2 sudu besar jus lima nipis
1 sudu besar minyak zaitun
Lada sulah dan garam secukup rasa

 Cara-caranya;
  1. Perap ikan dengan lada sulah, garam dan 1 sudu besar jus lima nipis. Ketepikan
  2. Sedaikan bahan-bahan - dimayang, hiris dan sebagainya.
  3. Sumbatkan bahan-bahan kedalam ikan secukupnya (kecuali cauli flower, jagung dan tomato). Ketepikan sikit daun sup dan daun bawang.
  4. Yang selebihnya tabur keliling ikan dan tabur sedikit garam, 1 sudu besar jus limau nipis dan 1 sudu besar minyak zaitun..Ketepikan
    Tabur sayur dan lebihan bahan
    dikeliling ikan
  5. Sediakan pengukus. Bila air dah menggelegak, kukus ikan dengan api sederhana selama 15 minit.
  6. Selepas 15 minit, buka tutup pengukus dan letak hirisan tomato dan lebihan daun sup dan daun bawang. Tambah air jika mahukan lebih berkuah.
  7. Tutup dan kukus lagi selama 5 minit.

My Strawberry Banana Muffins


Strawberry Banana Muffins....
Ingredients;

1/2 cup vegetable cooking oil
3/4 cup light brown sugar
3 size B eggs
1 cup mashed ripe banana
1 cup bite pieces fresh strawberries (cut into bite pieces)
2 1/4 cup self raising flour
1 teaspoon ground cinnamon

Method;
  1. Preheat oven to 180 degrees C. Position rack in center of oven.
  2. In a medium sized bowl whisk together the brown sugar, eggs, vanilla extract and mashed banana.
  3. Add the cooking oil to the brown sugar mixture and stir to combine.
  4. In another large bowl combine the flour nd cinnamon. Gently fold in the berries, making sure they are coated with flour. This helps to prevent the berries from sinking during baking.
  5. Add the wet ingredients to the dry ingredients and stir only until the ingredients are just combined. Do not over mix the batter or tough muffins will result.
  6. Divide the batter evenly among the 12 muffin cups, using two spoons or an ice cream scoop. I used ice crean scoop, for this size cups it just about the right amount of batter using the ice cream scoop and much much easier to work with..
  7. Place in the oven and bake until a tester inserted in the center of a muffin comes out clean, 20 to 25 minutes. Transfer to a wire rack to cool

Yum..yum..good to eat while they are still hot!!!

Of Rice and Choux Pastry Mishap!!!

Of Rice Mishap!!!

Frankly speaking Cik Ngah ni, is not very knowledgeable in terms of rice types and category -  yang mana ok dan tidak! Only 3 types of rice yang Cik Ngah pernah beli utk stock kat rumah: - Faiza Basmathi Moghul, Faiza Basmathi and Faiza Herba Ponni. Bila pi kedai yang tak der jual antara beras ni , Cik Ngah dah tak tahu nak beli yang mana!

Last Friday 21st Jan, Hubby request untuk masak hari tu, kebetulan balik awallah jugak! Since the rice is out of stock and  also on Sunday Cik Ngah was planning to cook Nasi Arab for Cik Ngah's sister, Cik Ngah suggest kat Hubby to buy rice sekalilah. At first Hubby had asked me to just cook vegetable soup and buy fried rice from the nearby stall.

Since the intention was to buy things for cooking vegetable soup, Hubby stop at 'kedai barang basah'. I went straight to rice sections, however I could not find any familiar brands. So I proceed to the next similar shop nearby. Tak der jugak...so I opted for basmathi rice with another brand - Jasmine.

At home while waiting for the rice to cook, Cik Ngah prepared the vegetable soup. So that nite the menu were fried rice and vegetable soup. When the rice was ready, I noticed that the rice tidak seperti basmathi yang pernah cik ngah guna..macam berpulut sikit...Arghhhh. Okay tak per, may be sebab salah sukatan air kot!!

On saturday morning, Cik Ngah cooked Nasi Lemak! and guess what..Nasi Lemak pun tak jadi! Tak best! Sunday Cik Ngah cooked nasi arab pulak..pun tak berapa jadi - lembik dan macam berpulut!!! Arghh...Tak sukanya...So now what to do? Nak kena habiskan beras yg 5 kilo tu dulu baru boleh beli yang lain!!! Tensionnya...

Anyway Cik Ngah shall share the Nasi Arab recipe yang cik ngah dah simplifykan in the next entry!!! Dah masuk 3 kali masak Nasi Arab ni. This time around pulak kurang menjadi...!!! Gambar pulak lupa snap!!!

Of Choux Pastry Mishap!!!

On Sunday jugak Cik Ngah buat choux pastry - creme puff punya pastri tu!! Before this dah pernah buat without any problem. That nite before buat Vanila Cream Filling, this one Cik Ngah never did. Kira first time try ler...it turn out marvelous, lemak berkrim dan tak manis sangat. Before this Cik Ngah just use whipping creme to fill in the choux pastry and eat with chocolate sauce - these type, they were called profiteroles!

First mishap happened when Cik Ngah was piping the pastry in the baking tray! Piping bag pecah!!! Ok, tak per, Cik Ngah proceed to just made the pastry into balls. Ready, off to oven and bake for 15 - 20 min. And voila..tak jadi! Arghhh... Malas nak ceritalah..but bottom line tak jadi. But I just procced to cut and filled the balls with the pre-prepared filling. Bila makan sedaplah, tapi tak nampak macam creme puff!!

Cik Ngah akan share the recipe when the pastry tu jadi yer..together with the Vanila Cream Filling. Banyak recipes cik ngah kumpul, and the one ynag Cik Ngah buat tu sedap, so I will stick to the onelah for Vanlla Cream Filling..Tungguu......
