Rojak Buah with Homemade Rojak Sauce!!! |
Never came across my mind to look for Rojak Petis recipe and try to make it. Selalunya beli jer, yg famous is Mak Bee brand. However, as my boss asked to have something DIY dish, as per previous migration weekend (weekend work), where we had successfully DIY fruit tartlettes....
Pikir punya pikir, apalah recipe that can be make at office pantry without having to cook. Taaraa... Rojak Buah and Sengkuang Calit. So as agreed, Cik Ngah bawak kuah rojak, dan yang lain2 bawak pelam, timun, jambu dll... Semua mesti siap bersih dan potong...
Alhamdulillah, all went well and Thumbs Up for the kuah rojak!!! Here is the recipe (caution : this recipe produce a lot!!);
1 botol kecil kicap lemak masin
500g gula melaka
100gm gula pasir
1 buku kecil belacan [bakar, dihancurkan]
1 botol sos cili
1 tin petis udang
1 tin blended cili kering (guna tin petis sebagai sukatan)
5-10 biji blended cili padi
250gm tepung ubi [dibancuh dgn air secukupnya]
Condiments;
Bijan Goreng
Kacang tanah goreng dan ditumbuk kasar (Cik Ngah beli kacang tanah 'Tong Garden' dan tumbuk)
Cara-cara :
- Blend cili kering + cili padi + belacan bakar
- Masukkan semua bahan dalam peiruk kecuali bancuhan tpg ubi.
- Masak atas api hingga licin, jika ada rasa kurang tambahlah apa yg perlu
- Masukkan sdkt demi sdkt paste tpg ubi, kacau tanpa henti supaya tak bergentel
- Masak hingga kuah sdkt pekat & licin
- Simpan dlm bekas bertutup
Cara Hidang;
- Basuh dan potong buah-buahan dan masukkan dlm mangkuk
- Masukkan kuah rojak, bijan dan kacang.
- Gaul rata dan sedia utk dimakan..
